Bacalaitos (Salted Cod Fritters); from Pura Vida


This is a fritter that every body goes nuts for in Puerto Rico. It is best served with an aioli.

Fritters
1 lb salted cod (soaked & shredded into small pieces)
2 Tbl adobo seasoning
25 cups chopped cilantro
4 Cloves garlic, minced
3.5 cups flour
2.5 Tbl baking powder
2.5 C milk

1. Once the bacalao is soaked for 12 hours in two changes of water, shred it and soak in milk for 3 hours.
2. Mix all the ingredients but bacalao milk; once well mixed, add the milk and mix well until smooth and all lumps have dissolved.
3. Let sit for a few hours before using.
4. Bring a deep fryer to 350 degrees and drop little spoon fulls of the batter; cook until golden brown.

Aioli
4 cloves garlic
.5 TSP kosher salt
1 EA egg yolk
.5 C salad oil
3 TBS fruity extra virgin olive oil
1 TSP water

1. Using a morter mash the garlic and salt until it forms a fine paste.
2. Add yolk and water; mix well; using a wisk, incorporate oil into the mixture slowly (as in mayonnaise).
3. Finish the emulsion with the extra virgin olive oil and maybe a little salt.

*Serve the freshly fried bacalaitos with a side of aioli.*
