| Crab Cakes 12 lbs. crab meat 2 cups diced yellow onion 1 cup Brunoise red pepper 1/2 cup minced chives 30 eggs 16 oz. impastada goat cheese 4 oz. butter 4 cups bread crumbs 1 tbs. minced garlic 2 tbs. black pepper 3 tbs. kosher salt 1 tsp. ground thyme Method: Sauté onions in melted butter and set aside to cool. Mix goat cheese and eggs until smooth. Add dry spices, ensuring there are no clumps. Mix in remaining ingredients. Bake until brown and done. |
