| Micah Willix Executive Chef, Ecco Micah Willix brings to Ecco more than 12 years of culinary experience in many areas along with a commitment to only the freshest ingredients. In his position as executive chef, Willix is responsible for menu development, food production and kitchen operations. The Fifth Group Restaurants® owners and I have the same vision when it comes to the menu at Ecco, says Willix. I see the menu as a straightforward approach to bold, European dishes that anyone can feel comfortable with, but is still progressive. Prior to his arrival at Ecco, Willix served as executive chef of Seasons 52 in Ft. Lauderdale, Florida. In this position, he opened and assisted in designing one of Americas first healthy concepts for Darden Restaurants. Willix worked with local purveyors on pricing and quality to set standards for other Seasons 52 restaurants while creating new training programs for subsequent openings. Before working at Seasons 52, Willix was the executive chef at Marks Las Olas, also in Ft. Lauderdale, Florida. There, he was responsible for overseeing all aspects of the kitchen, including food production and scheduling. At both Marks Las Olas and Seasons 52, Willix created and prepared nightly menus according to the freshest items available. Aside from his work as an executive chef, Willix has also held positions as a wine buyer, bread baker and caterer. He is able to use this experience to enhance his menu planning and the quality of each dish he prepares. At Ecco, Willix is looking forward to continuing his tradition of working with the freshest ingredients available and maintaining high quality with each dish. Willix now resides in Marietta. When not in the kitchen, he enjoys spending a lot of time outdoors cycling and hiking. |
