| David Maini by Kristi Porter Executive Chef David Maini doesnt just cook for a living, he creates for a living. With an extensive and varied 20-year career, Maini enjoys the challenges the kitchen gives him daily. Because Vine strives to bring guests high-quality, seasonal and regional flavors, Maini must stay on his culinary toes to prove himself. He does so with flying colors. With private and corporate experience, Mainis hospitality roots can be traced back to the American Cruise Lines. After working on the water, he headed for the dessert of Las Vegas. There, he became head room chef for Caesars Palaces exclusive "Bacchanal Room" which is known for its extraordinary, private seven-course dinner for VIP guests. During his time there, David was also a regular guest on a local morning TV show where he demonstrated many of his original menu creations. After leaving Las Vegas, Morton's Restaurant Group recruited Maini as Corporate Executive Chef for their Bertolini's Italian concept. And just prior to opening Vine as Executive Chef and partner, he was with the Bravo Development Group (Brio's). Chef David Maini has created a very innovative and refreshing menu at Vine. He has mastered the blending of prominent Southern flavors while remaining subtle and complimentary. Perhaps his unobtrusive flavors come from his unobtrusive persona. An all-around nice guy, Maini makes regular passes through the dining room to mix and mingle with restaurant guests. He even takes suggestions from them! Maini acknowledges that these are not merely paying customers, but guests. And with that, he does his best to please them. In return, they come back to see him. In fact, the fabulous, upcoming fall menu has several of their influences and suggestions on it. Should you want to spend a little more personal time with Chef Maini, celebrate a special occasion, impress clients or treat out-of-town guests, you will want to call ahead and reserve the Chefs Table. Here, an elegant evening will be spent in the stone cellar room with a menu specially prepared by you and the Chef. This unique, five-course experience puts you nose to nose with the man himself as he answers all your questions while impressing you and your guests. He evens pairs the wines himself! Never fear, though, if you are not able to afford such an evening. Sunday nights will suit you and your wallet just fine. Each week at 5:30, a 3-course meal is prepared and paired with wine for each course, all for under $28! Upon speaking with Chef Maini, he reiterates over and over, Everything I do here is a reflection of my philosophy. From the appetizers to the desserts, I want people to feel like they are guests in my home. I want them to be well-treated and well-fed. If they are not happy, Im not happy.
