Greetings from Woodfire!
Just in!...........
Wild King Salmon from Icy Straights, Alaska. This salmon is remarkable
in that it comes from extremely cold deep waters making it's fat content
quite high. This is good! This salmon is low in saturated fat and high
in polyunsaturated fats, omega 3's and other nutrients that are good
for you. And, by supporting wild salmon instead of farm raised, you
are helping the environment, we all win! We are serving it roasted in
the wood burning oven, served along side organic polenta from Anson
Mill's and some locally grown organic greens from Nicolas ofCrystal
Organics Farm . This is a powerful combination of ingredients and flavor!
(While supply lasts!)
The other afternoon, I had the opportunity to visit with Ruth &
Terry Bramlett of Bramlett Trout Farm in Suches, Ga., I truly have an
appreciation of what it takes to get these spectacular beauties to us
every week, simply amazing!
At this time, we are anxiously awaiting the arrival of softshell crabs,
asparagus, artichokes, english peas, morels, ramps, sugar snaps and
other harbingers of spring, we'll
keep you posted.
Also just in..........
